The St. Regis Maldives Vommuli Resort will welcome seven acclaimed culinary talents this August as part of Marriott International’s Luxury Dining Series 2026, ‘Across the Table’, headlined by two-Michelin-star Chef Emmanuel Stroobant. Taking place from August 26 to 30, the program unites chefs and mixologists from four St. Regis hotels in Asia for an immersive celebration of modern gastronomy, featuring intimate cooking experiences, omakase dining, heritage-based Indian cuisine, inventive cocktail combinations and refined four-course menus.

The art of collecting: August 27
The experience begins with a curated wine tasting led by Thomas Ling, whose deep expertise in beverage culture offers a refined perspective on the art of pairing and craftsmanship. As dusk falls, Brian Gonzalez of The St. Regis Bangkok presents a signature bar at The Whale Bar, bringing his globally refined approach to mixology, shaped by experience at leading European venues and recognized for creating award-winning cocktail programs.

A conscious contemporary culinary journey: August 28
Two Michelin star chef Emmanuel Stroobant leads a guided breathing yoga session. Emmanuel’s years of practice as a certified yoga instructor deeply immerse his culinary journey. At ALBA, guests are invited to an interactive four-handed cooking class. Chef Emmanuel will be joined by Chef Ahmet Özuçucu, Executive Sous Chef at the St. Regis Maldives Vommuli Resort – the evening will combine Chef Ahmet’s Mediterranean roots and refined culinary approach with Chef Emmanuel’s globally inspired techniques. The experience is limited to 10 guests and offers a rare insight into the philosophies and precision behind contemporary culinary craftsmanship.

As night falls, Cargo welcomes master chef Taj Mohammed Sha from Sahib Room at The St. Regis Mumbai with a family-style set menu. Known for his deep respect for regional Indian traditions and mastery of heritage recipes, Chef Taj crafts a menu that exudes depth of flavor, authenticity and storytelling. The evening will be completed with cocktail combinations created by Brian Gonzalez.

Expressions of Seasonality and Culinary Arts: August 29
Chef Takato Kitano of The St. Regis Osaka leads a curated Omakase lunch. After beginning his culinary journey as a teppanyaki chef in Osaka, Chef Kitano has developed a distinctive style shaped by both Japanese discipline and European culinary influences.

At ALBA, chef Emmanuel Stroobant presents a refined four-course menu, shaped by more than twenty years of culinary excellence and innovation. A pioneer of modern French cuisine in Asia, his work bridges classical European technique with Asian influences, creating dishes defined by balance, depth and emotional resonance.

A farewell with taste: August 30
Guests come together for a Mediterranean-inspired breakfast in Alba, where simplicity, freshness and quality are key. The experience takes place in a relaxed atmosphere and offers a moment of reflection, bringing together the tastes, conversations and connections developed over the course of the series.
