KIGO’s Summer Tsumugi Menu Combines Kaiseki Precision and Omakase Intimacy | News

KIGO, the fine Japanese dining destination at the Four Seasons Hotel Dubai International Financial Centre, presents a new chapter of the Tsumugi menu, reimagined for summer. Launched on June 3 and priced at AED 980 per person, the six-course seasonal tasting menu, curated by Chef Akinori Tanigawa, combines the discipline of Kaiseki with the intimacy of Omakase, offering an experience shaped by the fleeting pleasures of a Japanese summer.
Tsumugi is a Japanese word meaning woven fabric, threads of different origins pulled together into something whole. KIGO is a food journey that draws from two different culinary traditions and unites them into a single, considered experience. Twelve seats at the counter, unhurried, personal and intimate, suitable for a special evening with someone special or a quiet summer party.
The menu includes Scallops and Summer Vegetables with Beetroot Miso Sauce, through Chawanmushi with Green Pea Soup, Black Cod covered in Cha Soba Noodles with Uni Pate, before arriving at the main course of Charcoal Grilled Tajima Wagyu Sirloin, Salt Koji Cured. The experience concludes with a seasonal sushi selection with silken egg miso soup and a selection of premium Japanese fruits. Guests looking for a better experience can add the Premium Nigiri Selection, including Uni and Otoro from Seasonal Sushi Selection, for additional AED 520 per person. Premium drink combinations are available and charged separately.
For a more intimate experience, guests can enjoy the Tsugumi menu with a premium nigiri selection in KIGO’s Private Dining Room. The serene, Japanese-inspired space can accommodate up to 10 guests and costs AED 1,500 per person. It offers a private dining experience where harmony, craftsmanship and exclusivity are central.

Rooted in the Japanese philosophy of mono no awareness, the bittersweet awareness of transience, KIGO’s menus are written seasonally, shaped by what the land and sea have to offer at a given time, and experienced only once. The Tsumugi menu embodies that philosophy in six courses, each based on summer’s most considered ingredients.
