The collaboration with Chef Pam will come to life across 16 select MGallery Collection properties across Europe, Asia, Australia, Americas and the Middle East.
From historic city landmarks to coastal sanctuaries and design-led urban retreats, each property offers its own distinctive setting, united by a shared celebration of taste, creativity and elevated mixology. All this combined into a delicate moment of sharing for the guests of MGallery Collection, with a gentle combination of a light bite, a fresh cocktail and a conversation with a loved one or someone new.

At select locations, a curated cocktail collection will be served alongside Chef Pam’s globally inspired bites, creating a fully immersive gastronomic encounter. From the refined elegance of The Botanist’s Waltz paired with Chicken Wings to the bold brightness of the Prohibition Martini alongside Beef Tartare & Caviar, each combination is crafted to enhance contrast, texture and flavor.
Combinations include the Midnight Fizz Society meets the juicy Crab Roll. The Cult of Verde served with the Polenta truffle. The beautiful Archive of Tomorrow fits perfectly with Crispy Squid. The classics of the Sunset Botanica and Tropic Mirage are combined with local snacks, inviting guests to discover the local flavors of the region.

At the heart of the collaboration is a distinctive culinary signature, expressed in five core creations, designed for implementation across the 16 participating properties within MGallery’s collection of more than 127 boutique hotels. Created for the rhythm of the bar, effortless to share and instinctively paired with a sip, the bites are powerful yet balanced, familiar yet unexpected. Each unfolds in layers, playing with temperature, texture and contrast rather than a single note.
Signature creations including beef tartare with chilli cream and caviar, golden crab toast and crispy ink dip squid reflect Chef Pam’s signature balance of strength and finesse. Rather than simply curating dishes, she curates moments by layering brightness, warmth and depth to enhance the cocktail experience and elevate the ritual of the bar.
In addition to the five signature bites, Chef Pam has developed a range of regional interpretations inspired by local ingredients and cultural influences. Rather than replicating a single concept across continents, the creations gracefully adapt to their environments.
