THE MICHELIN GUIDE HAS AWARDED 2 STARS TO HAKUBA, THE JAPANESE RESTAURANT OF CHEVAL BLANC PARIS | News


Hakuba is honored to receive 2 MICHELIN stars and expresses its deepest gratitude to the MICHELIN Guide for this esteemed recognition.

Opened in March 2024, Hakuba is the fourth restaurant of Cheval Blanc Paris, born from the shared vision of chefs Arnaud Donckele, Takuya Watanabe and Maxime Frédéric. Hakuba offers a gastronomic initiation conceived as a journey, where the traditions of the Land of the Rising Sun meet the treasures of the Atlantic and French coasts through the art of kaiseki sushi cuisine.

Hakuba’s unique menu celebrates nature, the seasons and culinary gestures, supported by the close collaboration of the three chefs:

Cheval Blanc Paris expresses its thanks to the MICHELIN Guide for these 2 stars. They are in line with Plénitude, the gastronomic restaurant with three stars since 2022, and Le Tout-Paris, the contemporary brasserie that has been awarded one star since 2024, both led by chef Arnaud Donckele.

Hakuba is open from Tuesday to Saturday evening at 6:30 PM, 7:30 PM, 8:30 PM and 9:30 PM.
“Yume” menu: €420 or €460 including the signature “caviar temaki”.
