Inspired by the beauty of the ritual itself, the new afternoon tea invites guests to enjoy a carefully crafted experience that focuses on craftsmanship, elegance and the simple pleasure of unwinding.
This season, Shai Salon at Four Seasons Resort Dubai on Jumeirah Beach unveils Ritual, a new Afternoon Tea. Carefully curated by Senior Executive Pastry Chef Nicolas Lambert, the experience redefines afternoon tea through a more conscious and beautifully thought-out approach, focusing on craftsmanship, elegance and the simple pleasure of unwinding.
Based on the beauty of the ritual itself, flavors, textures and atmosphere come together through a carefully curated series of courses designed to be enjoyed gradually throughout the afternoon. Set in the serene and elegant surroundings of Shai Salon, Ritual Afternoon Tea invites guests to a thoughtful and graceful afternoon experience.
Guests are welcomed with a sparkling green tea, while the savory sequence introduces elevated interpretations of traditional afternoon tea favorites. Lobster Roll features butter-poached Canadian lobster paired with toasted brioche and a bisque mayonnaise, while Minted Cucumber combines cheddar cheese, labneh and sour cream on soft and fluffy white bread. Mimosa Truffle Tartlette infused fresh truffle with silken mimosa egg tart and Chicken Mustard Cream Baguette layers slow-cooked chicken breast with mustard cream sauce, spicy pickles and candied tomatoes, topped with aromatic basil leaves.
The experience continues with a pre-dessert featuring exotic rice rudding that combines coconut, vanilla, Thai mango and passion fruit foam, providing a refreshing break before the dessert series begins. The mini desserts include intricate creations such as 100 percent chocolate, moist chocolate cake covered in crunchy hazelnut and crémeux, and milk chocolate Chantilly.
Strawberry Short Cake offers a light balance of silky choux biscuit, strawberry gel, sublime cremè, whipped white chocolate ganache and fresh strawberries, while Pecan · Caramel · Vanilla combines a decadent layer of pecan praline with tonka vanilla mousse, pecan crunch and Dulcey chocolate for a warm, indulgent treat. Guests can also enjoy dark sesame black rice · dark chocolate, with black crispy rice on top of a dark sesame sponge, complemented by dark chocolate and sesame crémeux and topped with a crunch of black sesame praline. To conclude, Tonka Caramel Brioche consists of delicate brioche, soft tonka caramel and fleur de sal, providing a warm and comforting ending to the Ritual experience.
