Namron Hospitality takes culinary offerings to the next level in its portfolio and introduces new concepts and menus | News

Namron Hospitality is the award-winning boutique brand behind some of Mexico’s most acclaimed restaurants, including the Michelin Guide-recognized NÜ in Tulum. It is known for designing and operating unique, curated dining experiences that harmonize with the bespoke hotels under its banner. Today, Namron is proud to announce the next chapter in its culinary journey, introducing a range of new, innovative concepts and menus across its portfolio.

Three restaurants give a new look at the cuisine in Tulum
Namron Hospitality has not only been a leader in elevating the culinary scene in Tulum, but also as a vocal advocate for sustainable growth, championing local and small batch production. In 2024, Namron’s most refined dining expression, NÜ at La Valise Tulum, became one of the first ever restaurants in Mexico to be recognized by the globally respected Michelin Guide, further cementing the brand as a pioneer in elevating Mexican cuisine to the international landscape.

Demonstrating its commitment to continuous evolution and relentless innovation, NÜ is pleased to reintroduce itself with a redesigned culinary ecosystem and accompanying tasting menu that is rooted in Mexico: in its ingredients, fire, markets and memory. Each dish is carefully and purposefully curated, inspired by the team behind the food itself, with each course accompanied by lettering that explains the backstory and purpose behind each bite. Their history, memories and hearts translate into culinary masterpieces, cooked over an open fire, inviting guests to rediscover the magic that put this restaurant on the world map.

Namron is also proud to introduce two new additional concepts within the destination at two of La Valise’s award-winning properties. Bringing together contemporary Mexican cuisine and Sicilian technique, Climo brings a slice of coastal Italy to the beaches of Tulum, with handmade pasta, wood-fired pizza and fresh seafood celebrating the best of both countries at Encantada. New concepts in Mexico City
Located in the Torre Virreyes de Chapultepec skyscraper in Mexico City’s Lomas Virreyes neighborhood, Hotel Alexander, one of the newest additions to the Namron Collection, reintroduces its signature dining concept as the Alexander Bar. Formerly known as the Caviar Bar, the original restaurant became increasingly popular as Mexico’s one and only caviar bar. This status remains true, maintaining its position as the city’s premier caviar tasting venue, while also elevating the restaurant into an expansive cocktail and social bar where sophistication and intentional craftsmanship meet a redesigned food and beverage menu led by Executive Chef Ana Sophia Serrano.

The grand opening of El Cortés, housed in a renovated presidential palace in one of the city’s most culturally rich neighborhoods, Roma Norte, is widely considered one of the most anticipated debuts of 2026. Ahead of the hotel’s official inauguration, the hotel’s signature cozy contemporary European restaurant Lotti, the first solo project of Swiss chef Luc Liebster, is now open for lunch and dinner, serving signature dishes such as chicken Cordon Bleu, braised lamb and Wagyu. fillet.
