Waldorf Astoria Kuala Lumpur Unveils Groundbreaking Culinary Collaborations | News

Waldorf Astoria Kuala Lumpur today unveiled its culinary vision, led by globally acclaimed chefs Garima Arora and Jean-Georges Vongerichten. The hotel brings together two of the world’s most influential chef-restaurants and introduces a dynamic collection of dining experiences, placing Waldorf Astoria Kuala Lumpur at the forefront of the region’s gastronomic landscape, where craft and culture collide.

“Delivering unforgettable moments that delight our guests is at the core of the Waldorf Astoria ethos,” said Candice D’Cruz, vice president, Luxury Brands, Asia Pacific, Hilton. “Today, gastronomy is one of the most compelling drivers of luxury travel. Through collaborations with visionary chefs like Garima Arora and Jean-Georges Vongerichten, we continue to build on the brand’s legendary legacy of culinary excellence while curating immersive dining experiences that connect global expertise with Kuala Lumpur’s rich cultural story.”

Arora, chef-owner of the two Michelin star restaurant Gaa in Bangkok, is internationally recognized for her progressive interpretation of Indian cuisine. In 2018, Restaurant Gaa earned a Michelin star under her leadership, making her the first female Indian chef to lead a Michelin-starred restaurant. Since then, she has received numerous awards, including Asia’s Best Female Chef and Asia’s 50 Best Restaurants.

The name Yaari, which means ‘friendship’ in Hindi, reflects the DNA of Arora’s modern Indian establishment and embodies the legacy of genuine Indian hospitality. Reinventing traditional dishes through a deep understanding of traditional cooking techniques and the application of spices, the cuisine is both modern and timeless. The contemporary space is warm and subtly playful, layered with rich textures and a sense of understated allure.

Yaari presents a modern Indian menu that celebrates the breadth and diversity of the Indian culinary landscape. Regional Indian dishes are being reinvented, from the spicy curries of the south coast to the smoky kebabs of the north. The menu will feature sophisticated chaats, elevating one of India’s most beloved street foods into an artful expression of texture and spice.

The menu will maintain its interactive nature with a dessert menu inspired by traditional mithais, while refining its precision and presentation. Yaari reflects Arora’s philosophy of honoring tradition while reimagining it for a global audience.

“Yaari will celebrate the extraordinary diversity of Indian cuisine in a way that feels both authentic and contemporary,” said Chef Garima Arora. “Yaari was born from my passion for storytelling through food, celebrating heritage, creativity and the joyful experience of sharing a meal. I look forward to welcoming guests to explore these forward-thinking concepts in Kuala Lumpur’s dynamic culinary landscape.”

Jean-Georges Vongerichten introduces three different concepts
Internationally renowned French chef Jean-Georges Vongerichten will debut three signature concepts at the hotel: JG KL, abc kitchens KL and The Bar by JG. Each concept is designed to redefine contemporary fine dining, offering an inventive, compelling culinary journey that combines mastery with creativity.

With a career spanning more than four decades, Vongerichten is celebrated for his distinctive approach that combines French technique with vibrant Asian influences. His flagship restaurant Jean-Georges in New York City was trained under legendary masters before establishing his culinary empire and currently holds two Michelin stars.

A tranquil, contemporary space where global sophistication and a tranquil sense of place come together, JG KL combines French, American and Asian influences. Beautifully crafted dishes are rooted in precision and seasonality, guided by bold flavor contrasts tempered with effortless elegance.

Energetic and cozy, the space balances botanical modernism with tropical restraint.

Completing Vongerichten’s trio of venues, The Bar by JG is a polished yet spirited space that combines French elegance with Southeast Asian energy. The menu offers elevated yet approachable small plates and shareable dishes that pair effortlessly with a curated beverage selection that reflects Vongerichten’s philosophy of balance, freshness and precision.

“Waldorf Astoria Kuala Lumpur offers a unique opportunity to combine a collection of gastronomic experiences that reflect a global perspective alongside a deep respect for place,” said Executive Chef Jean-Georges Vongerichten. “Malaysia’s rich cultural heritage and vibrant food heritage provide an inspiring backdrop, and I look forward to creating moments that elevate familiar flavors with refined technique.”
